Our university is currently configured for more than 33,000 students, 2,000 teachers and researchers and about 1,000 management and professional services, is a collective entity sufficient for the conduct of nutritional contribute to improving the quality of life for its members. In this context, given the lack of previous studies, the idea of this work to assess the nutritional status of the population of the UPV: Students and PAS / PDI. For this, we studied their eating habits, assessment of dietary intake, anthropometric measurements and biochemical indicators of health. This evaluation is intended to ascertain the current status of the university in order to design effective action in relation to nutrition. The results show that although the acceptable caloric intake is an imbalance in the supply of nutrients. On average there is excess energy in the form of fats and poor in carbohydrates. There are deficiencies in some micronutrients such as iron and calcium, especially in the female population. The prevalence of obesity is around 11% of men and 2% of women for PAS / PDI.
