The tomato is the main vegetable crop in Spain today. More than half of its production
is dedicated to the sale for fresh consumption, this being the reason for their great economic importance.
Increased production of tomatoes outside the usual cycle of cultivation,
has been favored by the improvement of life experienced in recent years that has led to
require year-round fresh vegetables before consumption had a season.
