Diseño y construcción de una fábrica de cerveza estilo Pils en el T.M. de La Vila Joiosa (ALACANT)

Abstract

[ES] El presente Proyecto Final de Máster, de la titulación Máster Universitario en Ingeniería Agronómica, trata sobre el diseño y dimensionado de una Fábrica de cerveza de estilo Pils más un Edificio Anexo ubicada en la partida Torres Ser Norte 11, Suelo P P 16 Parcela 1.1, en el polígono industrial de La Vila Joiosa (Alacant). La nave principal albergará el proceso de producción constituido por la recepción de materias primas, maceración de la malta, la cocción del mosto, la fermentación del mosto, maduración y su posterior embotellado. La producción de cerveza será de 6.000 hl al año, estimada para abastecer al 20 % de los habitantes consumidores de cerveza de las comarcas de La Marina Baixa y La Marina Alta. Para albergar dicha producción la nave principal tendrá unas dimensiones de 25 metros de ancho y 31,5 metros de largo y 5,75 metros de alto y será de estructura metálica con una cubierta a dos aguas. Los cerramientos serán, para los muros laterales, placas prefabricadas de hormigón hasta los 3 metros y superiormente mediante placas metálicas simples grecadas. La cubierta estará recubierta por panel sándwich. Por otro lado, la Fábrica de poseerá un Edificio Anexo constituido por una estructura de hormigón armado. Las dimensiones del edificio serán de 10,8 metros de ancho y 10 metros de largo y una altura de 10,2 metros. En el edificio anexo albergará las salas de oficinas, vestuarios y laboratorio. Todas las dimensiones se adecuarán a las Normas Urbanísticas del Plan Parcial del Polígono. Como base de cálculo se utilizará la Instrucción Española de Hormigón Estructural (EHE-08) y la Instrucción de Acero Estructural (EAE). Será de obligado cumplimiento las especificaciones recogidas en los Documentos Básicos del Código Técnico de la Edificación (CTE). Este proyecto poseerá todos los sistemas de servicio necesarios.

[EN] This Master’s Final Project, of the University Master’s degree in Agricultural Engineering, deals with the design and sizing of a Pils-style brewery plus an Annex Building located in the Torres Ser North 11, PP plot 16, plot 1.1 in the industrial estate of La Vila Joiosa (Alacant) The main warehouse will house the production process consisting of the reception of raw materials, mace maceration, the firing of the must, the fermentation of the must, ripening and subsequent bottling. The production of beer will be 6,000 hl per year, estimated to supply 20% of the inhabitants consuming beer in the districts of La Marina Baixa and La Marina Alta. To house such production the main nave will have dimensions of 25 meters wide and 31.5 meters long and 5.75 meters high and will be of metal structure with a gable roof. The enclosures will be, for the lateral walls, prefabricated concrete slabs up to 3 meters and superiorly with simple metal plates grated. A sandwich panel will cover the cover. On the other hand, the Factory will own an Annex Building constituted by a reinforced concrete structure. The dimensions of the building will be 10.8 meters wide, 10 meters long, and a height of 10.2 meters. In the annex, building will house the offices, changing rooms and laboratory rooms. All the dimensions will be adapted to the Urbanistic Regulations of the Partial Plan of the Polygon. The Spanish Structural Concrete Instruction (EHE-08) and the Structural Steel Instruction (EAE) will be used as a basis for calculation. Comply with the specifications included in the Basic Documents of the Technical Building Code (CTE). This project will have all the necessary service systems.
