[ES] El creciente interés de la humanidad por cuidar el medio ambiente y su alimentación ha provocado que cada vez se estudien más alternativas a alimentos basados en carne, pues es bastante la evidencia científica que demuestra como su consumo en exceso perjudica la salud de las personas y del planeta. Por ello, en este trabajo se presenta una alternativa a las hamburguesas de carne basada en proteína de guisante texturizada. El objetivo ha sido optimizar una formulación que se ajuste a lo que el consumidor puede esperar de una hamburguesa convencional. Para ello, se ha medido el color, la actividad de agua, la variación de volumen, el contenido en proteínas, la dureza y la adhesividad; tras esto se ha llevado a cabo la optimización pertinente fijando un valor para cada una de estas variables obteniendo así la formulación óptima. Se ha realizado un análisis sensorial para comprobar si el color, el aspecto, el aroma, el sabor y la textura son los esperados por el consumidor. La formulación optimizada contendría: 49,93% de jugo de remolacha, 24,93% de proteína de guisante, 9,93% de harina de avena, 14,93% de grasa y 0,27% de sazonador. Por otra parte, se ha abordado el diseño de las instalaciones de refrigeración-congelación para la elaboración y almacenamiento de estas hamburguesas. Para ello, se ha tenido en cuenta la producción semanal de la industria y las etapas necesarias para su producción. El circuito propuesto es un circuito en cascada que utiliza para la zona de baja temperatura el gas R-1270 y para la zona de alta temperatura R-290, con una SCOP de 9,528 y por tanto con una alta eficiencia térmica.

[EN] Humanity's growing interest in caring for the environment and its diet has led to the study of more and more alternatives to meat-based foods, as there is considerable scientific evidence that shows how excessive consumption of meat harms the health of people and the planet. For this reason, this study presents an alternative to meat burgers based on textured pea protein. The aim has been to optimise a formulation that matches what the consumer can expect from a conventional hamburger. To do this, colour, water activity, volume variation, protein content, hardness and stickiness were measured and then optimisation was carried out by setting a value for each of these variables to obtain the optimal formulation. A sensory analysis has been carried out to check if the colour, appearance, aroma, taste and texture are as expected by the consumer. The optimised formulation would contain: 49.93% beetroot juice, 24.93% pea protein, 9.93% oat flour, 14.93% fat and 0.27% seasoning. On the other hand, the design of the refrigeration-freezing facilities for the production and storage of these hamburgers has been addressed. For this purpose, the weekly production of the industry and the stages necessary for its production have been taken into account. The proposed circuit is a cascade circuit using R-1270 gas for the low temperature zone and R-290 for the high temperature zone, with a SCOP of 9.528 and therefore with a high thermal efficiency.
