Escuela gastronómica y hotel con huerta productiva

Abstract

[ES] El proyecto se enfrenta a la problemática de una parcela sobre el eje de Serrería, colindante al edificio del Asilo Hospital San Juan de Dios. Se trata de responder a las necesidades del lugar, formando un dialogo estrecho entre el conjunto propuesto y el Hospital existente. El origen y la historia de la parcela, rodeada por alquerías y barracas a lo largo de los siglos, encuentran su continuación en la huerta productiva como protagonista de la cota cero. Inspirándose en el entorno, el proyecto pone en valor el espacio común exterior, que articula las piezas del programa de la escuela de gastronomía, restaurante y hotel. A su vez, la necesidad actual de un consumo respetuoso abre al proyecto una oportunidad de reconsiderar los procesos establecidos tanto para la arquitectura, como para el campo de la gastronomía y alimentación.

[EN] The project faces the problem of a plot on the Serrería axis, adjacent to the San Juan de Dios Asylum Hospital building. The aim is to respond to the needs of the site, forming a close dialogue between the proposed complex and the existing Hospital. The origin and history of the plot, surrounded by farmhouses and barracks over the centuries, find their continuation in the productive orchard as a protagonist of the ground level. Inspired by the context of the place, the project enhances the value of the communal outdoor space, articulating the pieces of the gastronomy school, restaurant and hotel programme. At the same time, the current need for respectful consumption opens up an opportunity for the project to reconsider the established processes both for the architecture and the gastronomy field.
