Análisis, arquitectura y diseño de un Kitchen Display System (KDS) para negocios hosteleros

Abstract

Tradicionalmente, el sector de la hostelería y, más específicamente, los negocios de restauración han sido menos proclives a su informatización que casi cualquier otro tipo de negocio. Sin embargo, esta tendencia ha comenzado a cambiar en los últimos años, en la medida que los negocios hosteleros han ido constatando cómo la automatización de alguno de sus procesos clave puede llevarles a mejorar de manera importante aspectos como sus tiempos de respuesta, sus costes operativos y la calidad del servicio al cliente. Así, el sector está actualmente inmerso en una re-industrialización basada en sistemas software.

En este entorno, uno de los puntos que está atrayendo más atención es la comunicación entre los clientes de un restaurante y su centro de producción, que no es otro que su cocina. Este Trabajo Final de Máster se centra en el análisis, arquitectura y diseño de un Kitchen Display System (KDS), integrado en una solución preexistente de software de Terminal Punto de Venta (TPV). Los KDS son sistemas software capaces de comunicar a cocina todos los nuevos pedidos que se producen en un restaurante o negocio similar, permitiendo gestionarlos mediante una serie de acciones y primitivas preestablecidas. Estos sistemas también pueden enviar información del estado de los pedidos a los camareros y clientes en tiempo real.

El análisis de requisitos del nuevo KDS se llevará a cabo atendiendo al estado del arte actual en este tipo de sistemas, así como al conocimiento del sector de uno de los fabricantes de software para hostelería líderes en el mercado español.

Businesses within the hospitality sector and, most specifically, restaurant businesses, have traditionally been less prone to computerization than almost any other kind of enterprises. Nevertheless, this trend has started to change in recent years, as hospitality businesses are learning how automatization of some of their core processes can lead to improvements in response times, running costs and quality. Thus, the sector is currently in the middle of a computer-driven reindustrialization.

One of the aspects that is attracting more attention in this environment is the communication between the client of a restaurant or similar business and its production center, i.e., its kitchen. This Master s Thesis will focus on the analysis, architecture and design of a Kitchen Display System (KDS) integrated into a previously existing Point Of Sale (POS) system. KDSs are pieces of software that are capable of communicating all the new orders to the kitchen of a restaurant, allowing to manage them with a number of actions. They may also send feedback to waiters or clients about each order status.

The requirement analysis of the new KDS will be carried out by studying the current state of the art, and combining it with the know-how of a leading Spanish POS software company.
