Abstract

[ES] En el sector agroalimentario existen grandes retos y oportunidades para cumplir los objetivos de desarrollo sostenible. Las tecnologías emergentes se están convirtiendo en herramientas clave para ayudar a los diferentes actores del sector a avanzar hacia estos objetivos. Con este proyecto queremos contribuir a ese propósito, proponiendo la trazabilidad de los productos agroalimentarios desde su cultivo hasta la mesa del consumidor, utilizando tecnología blockchain.

Con la implementación del blockchain, además de garantizar la integridad de los registros en cada etapa de la cadena de valor, se facilita el acceso a los datos de manera parcial o total no solo a los integrantes de las empresas de la cadena de valor, sino también a los resto de entidades relacionadas: comercializadores, consumidor final, autoridades sanitarias y sociedad en general.

Más concretamente, se pretende registrar de forma transparente cada transacción que se realiza en cada proceso por el que pasa el producto, desde el momento de su cultivo hasta que el consumidor final realiza la compra, así como garantizar la integridad de todos los datos que se grabado. en toda la línea de trazabilidad.

[EN] In the agri-food sector there are great challenges and opportunities in meeting the sustainable development goals. Emerging technologies are becoming key tools to help the different actors in the sector to move towards these objectives. With this project we want to contribute to that purpose, proposing the traceability of agri-food products from their cultivation to the consumer's table, using blockchain technology.

With the implementation of the blockchain, in addition to guaranteeing the integrity of the records at each stage of the value chain, access to the data is facilitated partially or totally not only to the members of the companies in the value chain, but also to the rest of related entities: retailers, final consumer, health authorities and society in general.

More specifically, it is intended to transparently record each transaction that is carried out in each process that the product goes through, from the moment of its cultivation until the final consumer makes the purchase, as well as guaranteeing the integrity of all the data that is recorded. throughout the entire traceability line.
