[ES] El cultivo de caqui en España ha sufrido una gran expansión en los últimos años, destacando la variedad Rojo Brillante. Existen problemas tanto por la elevada astringencia de esta variedad como por la sobreproducción y la estacionalidad de la misma, lo que ha motivado la búsqueda de métodos de procesamiento de este fruto para obtener productos derivados que reduzcan dicha problemática. Este trabajo busca determinar la influencia de la materia prima (caqui astringente y no astringente) y el tratamiento térmico empleado (50 y 100ºC) en el contenido en taninos solubles y las características fisicoquímicas de los dulces de caqui obtenidos durante su almacenamiento en refrigeración. Se ha visto que la muestra formulada a partir de caqui astringente y procesada a 100ºC, así como la formulada a partir de caqui no astringente y procesada a 50ºC son las que menor contenido en taninos poseen y, por tanto, menor astringencia, y que el almacenamiento en refrigeración es un buen método para evitar la reversión de la astringencia provocada por dichos tratamientos térmicos. Además, a 100ºC se produce la inactivación de enzimas responsables del pardeamiento enzimático, provocando menores cambios de color durante el almacenamiento. Por último, las muestras presentan un comportamiento tixotrópico en el que la no astringente a 50ºC es la que mayor área de histéresis presenta y, por consiguiente, mayor grado de ruptura estructural. Las estructuras más estables son las muestras a 100ºC, temperatura a la que se inhibe la actividad enzimática de la pectinmetilesterasa.

[EN] Persimmon cultivation in Spain has undergone a great expansion in recent years, highlighting the variety Rojo Brillante. There are problems due to the high astringency of this variety as well as its overproduction and seasonality, which has motivated the search for methods of processing this fruit to obtain derivative products that reduce these problems. This work seeks to determine the influence of the raw material (astringent and non-astringent persimmon) and the heat treatment used (50 and 100ºC) on the soluble tannin content and the physicochemical characteristics of persimmon sweets obtained during refrigerated storage. It was found that the astringent sample at 100ºC and the non-astringent sample at 50ºC are the ones with the lowest tannin content and, therefore, the lowest astringency, and that refrigerated storage is a good method to avoid the reversal of the astringency caused by these heat treatments. In addition, at 100ºC the enzymes responsible for enzymatic browning are inactivated, causing less color changes during storage. Finally, the samples show thixotropic behavior in which the non-astringent one at 50ºC has the highest hysteresis area and, consequently, the highest degree of structural rupture. The most stable structures are the samples at 100ºC, a temperature at which the enzymatic activity of pectinmethylesterase is inhibited.
