[ES] La microbiota intestinal juega un papel esencial en la salud humana, desempeñando funciones cruciales en la nutrición, protección contra patógenos y el desarrollo y regulación del sistema inmunológico. Aunque la microbiota incluye diversos microorganismos como arqueas, hongos, protozoos y virus, son las bacterias las más predominantes y, por ende, el enfoque principal de este estudio. La composición es altamente dinámica y puede ser influenciada por diversos factores externos a lo largo de la vida, siendo uno de ellos la dieta. Las fibras dietéticas y polifenoles presentes en alimentos, especialmente de origen vegetal, tienen un impacto positivo en la comunidad bacteriana y en los metabolitos producidos. Por otra parte, el sector agroalimentario genera una gran cantidad de subproductos, como las pieles, bagazos y excedentes de frutas, que a menudo son tratados como residuos a pesar de contener cantidades importantes de compuestos bioactivos y otras macromoléculas de interés nutritivo.
El objetivo principal de este estudio fue revalorizar el bagazo de naranja y los excedentes del caqui, mediante la obtención de ingredientes en polvo de elevado valor antioxidante y con efecto beneficioso sobre la microbiota. Se evaluó el efecto del procesado y de la digestión gastrointestinal in vitro y la fermentación colónica sobre sus propiedades antioxidantes (fenoles totales, flavonoides y capacidad antirradical). Para la obtención de los ingredientes en polvo se aplicó el secado por aire caliente a temperatura de 60 °C y 70 °C o la liofilización, y posteriormente los productos secos se trituraron a dos granulometrías distintas, gruesa y fina. La fermentación colónica in vitro se llevó a cabo en condiciones de anaerobiosis utilizando muestras fecales de mujeres postmenopáusicas sanas. Se estudiaron los cambios inducidos en la composición general de la microbiota intestinal y su producción de ácidos grasos de cadena corta en respuesta a los diferentes sustratos.
Los resultados mostraron que los polvos obtenidos eran estables frente al deterioro microbiológico y que el método de secado y la disgregación mecánica aplicada afectaron sus propiedades fisicoquímicas y su capacidad antirradical. Asimismo, se observó que las etapas de simulación de la digestión gastrointestinal y la fermentación colónica afectaron la capacidad antirradical de los polvos. Además, se evidenció que el tipo de sustrato y el tratamiento aplicado influyeron significativamente en la composición de la microbiota y en la producción de ácidos grasos de cadena corta.

[EN] The gut microbiota plays an essential role in human health, performing crucial roles in nutrition, protection against pathogens, and the development and regulation of the immune system. Although the microbiota includes various microorganisms such as archaea, fungi, protozoa and viruses, bacteria are the most predominant and, therefore, the main focus of this study. The composition is highly dynamic and can be influenced by various external factors throughout life, one of them being diet. Dietary fibers and polyphenols present in foods, especially those of vegetable origin, have a positive impact on the bacterial community and on the metabolites produced. On the other hand, the agri-food sector generates a large amount of by-products, such as skins, bagasse and surplus fruit, which are often treated as waste despite containing significant amounts of bioactive compounds and other macromolecules of nutritional interest.
The main objective of this study was to revalue orange bagasse and persimmon surpluses, by obtaining powdered ingredients with high antioxidant value and with a beneficial effect on the microbiota. The effect of processing and in vitro gastrointestinal digestion and colonic fermentation on its antioxidant properties (total phenols, flavonoids and antiradical capacity) was evaluated. To obtain the powdered ingredients, hot air drying at a temperature of 60 °C and 70 °C or freeze-drying was applied, and then the dry products were crushed to two different particle sizes, coarse and fine. In vitro colonic fermentation was carried out under anaerobic conditions using fecal samples from healthy postmenopausal women. The changes induced in the general composition of the intestinal microbiota and its production of short-chain fatty acids in response to the different substrates were studied.
The results showed that the obtained powders were stable against microbiological deterioration and that the drying method and the applied mechanical disintegration affected their physicochemical properties and their antiradical capacity. Likewise, it was observed that the simulation stages of gastrointestinal digestion and colonic fermentation affected the antiradical capacity of the powders. In addition, it was found that the type of substrate and the treatment applied significantly influenced the composition of the microbiota and the production of short-chain fatty acids.
