[ES] El cultivo de caqui en España ha sufrido una gran expansión en los últimos años, destacando la variedad `Rojo Brillante¿. Existen problemas tanto por la elevada astringencia de esta variedad como por la sobreproducción y la estacionalidad, produciendo un gran volumen de desperdicios. Esto ha motivado el desarrollo de productos derivados que reduzcan dicha problemática. Este trabajo busca determinar la influencia del tratamiento térmico empleado (70 y 100 ºC) y la cantidad de azúcar (30 y 50%) en el contenido en taninos solubles, responsables de la astringencia, y en las características fisicoquímicas del dulce de caqui formulado a partir de fruta astringente. A su vez, se estudia su evolución durante el almacenamiento en refrigeración. Las muestras formuladas con un 50% de azúcar fueron las que menor contenido en taninos solubles presentaron, sin diferencias entre el tratamiento térmico. Las muestras con un menor contenido en azúcar presentaron una textura más firme. Por otra parte, las muestras sometidas a un tratamiento térmico de 100 ºC presentaron menores cambios de color durante el almacenamiento, posiblemente debido a la inactivación de enzimas responsables del pardeamiento enzimático. Finalmente, la formulación elaborada con un tratamiento térmico de 100 ºC y con un 50% de azúcar fue la mejor valorada por los jueces tras realizar un análisis sensorial.

[EN] The cultivation of persimmon in Spain has undergone a great expansion in recent years, highlighting the variety 'Rojo Brillante'. There are problems both due to the high astringency of this variety and due to overproduction and seasonality, producing a large volume of waste. This has motivated the development of derivative products that reduce this problem. This work seeks to determine the influence of the heat treatment used (70 and 100 ºC) and the amount of sugar (30 and 50%) on the content of soluble tannins, responsible for astringency, and on the physicochemical characteristics of persimmon candy formulated from astringent fruit. At the same time, its evolution during refrigerated storage is studied. The samples formulated with 50% sugar were the ones with the lowest content of soluble tannins, with no differences between the heat treatment. Samples with a lower sugar content had a firmer texture. On the other hand, samples subjected to a heat treatment of 100 ° C showed fewer colour changes during storage, possibly due to the inactivation of enzymes responsible for enzymatic browning. Finally, the formulation made with a heat treatment of 100 ºC and with 50% sugar was the best valued by the judges after performing a sensory analysis.
