[ES] Las herramientas de calidad aplicadas a la industria agroalimentaria son clave para los técnicos que buscan reducir errores y garantizar la máxima calidad y seguridad de los productos. En esta línea, el presente trabajo muestra un análisis de algunas de las herramientas más utilizadas hoy en día, teniendo en cuenta la facilidad de uso, el tiempo de aplicación, los recursos necesarios, la exclusividad de la información que aportan y los datos necesarios para poderlas aplicar. Además, presenta un procedimiento para la gestión de las no conformidades recurrentes y hace una propuesta de posibles herramientas que sirvan de apoyo para la toma de decisiones y mejora continua en distintas etapas del procedimiento. En general, los resultados muestran que la tormenta de ideas, las 5S y los 5 porqués son las herramientas más sencillas en casi todos los ítems valorados. En cambio, la aplicación Qlik es de las que pueden resultar difíciles en cuanto a recursos y datos necesarios. El procedimiento desarrollado ha permitido trabajar de forma estructurada y eficiente para controlar las no conformidades que se repiten. Por último, las herramientas propuestas en determinadas etapas del procedimiento y los ejemplos aportados indican que su uso es un importante apoyo en la toma de decisiones y permiten trabajar en el camino de la excelencia, para conseguir cero defectos, cero desperdicios, cero alertas y aseguramiento de la calidad total.

[EN] Quality tools applied to the agri-food industry are key for technicians seeking to reduce errors and ensure maximum product quality and safety. In this line, the present work shows an analysis of some of the most used tools nowadays, taking into account the ease of use, the application time, the necessary resources, the exclusivity of the information they provide and the necessary data to be able to apply them. It also presents a procedure for the management of recurring nonconformities and proposes possible tools to support decision making and continuous improvement at different stages of the procedure. In general, the results show that brainstorming, 5S and the 5 Why's are the simplest tools in almost all the items evaluated. On the other hand, the Qlik application is one of those that can be difficult in terms of resources and data required. The procedure developed has made it possible to work in a structured and efficient way to control recurring nonconformities. Finally, possible tools are proposed to support certain stages of the procedure with the idea of providing an objective criterion for decision making and working towards excellence, towards the path of zero defects, zero waste, zero alerts and total quality assurance.
