[EN] In its aim to develop probiotic foods as an alternative to the dairy products
currently available on the market, the research group that heads this study
has achieved the incorporation of tangerine juice, inoculated with
Lactobacillus salivarius spp. salivarius, in the structural matrix of apple slices
through vacuum impregnation. Nevertheless, the impregnated samples, with
bacteria counts > 106 CFU(Colony Forming Units)/g, were losing their
probiotic content after being air dried at 40 ºC, probably due to the fact that
final water activity values did not descend to less than 0,45.
In order to increase the probiotic viability in the dehydrated product, this
work proposes the incorporation of trehalose and the application of
homogenization pressure to the impregnation liquid, as well as the reduction
of water activity in the snack.
According to the obtained results, the most decisive factor in the survival
of the microorganism during the apple snack storage is the water activity
value reached after the drying process, being preferred a value of 0,35. In the
case of not reaching such low values for the water activity, the incorporation
of 10% trehalose or the application of a homogenization pressure of 100MPa
to the impregnation liquid, would contribute to the reduction of the loss in
probiotic microorganism viability during snack storage

[ES] El objetivo de este trabajo consiste en estudiar el comportamiento de láminas de manzana (5 mm de espesor) impregnadas con zumo de mandarina y diferentes concentraciones de trehalosa (0, 10 y 30%) durante su secado con aire a diferentes temperaturas (30, 40, 50 y 60 ºC). A partir de los valores de masa, humedad y actividad del agua medidos a diferentes tiempos a lo largo del proceso será posible estimar el tiempo de secado necesario para alcanzar en cada caso una actividad del agua en el producto inferior o igual a 0,35 que, según estudios previos, afecta positivamente a la supervivencia de determinados microorganismos probióticos de interés por sus efectos beneficiosos sobre la salud.
Por otra parte, se estudiará el efecto que la aplicación de altas presiones de homogenización sobre el zumo formulado con y sin trehalosa e inoculado con microorganismos probióticos ejerce sobre la supervivencia de los mismos.
Una vez obtenidos estos resultados, se seleccionarán los líquidos que proporcionen mayores recuentos y se utilizarán para la impregnación de láminas de manzana. A continuación, éstas láminas se secarán hasta dos niveles de actividad del agua (0,35 y 0,45) y se analizará la supervicencia del probiótico durante 30 días de almacenamiento.
