[EN] This project aims to build and cook food complex structures using 3D printing. It will be based on the physicochemical characterization and state diagram construction through different calorimetric and dielectric techniques obtaining also the gelation collagen kinetics in different states of secondary aggregation. This requires getting the different states collagen gel diagram using techniques such as differential scanning calorimetry associated with conductimetric changes, and then characterize the viscoelastic properties of the different states of gelation by testing texture. Furthermore, the gelling system requires a monitoring system that allow ensure the elastic gel state, this was analyzed by dielectric spectroscopy in the spectrum radiofrequency and microwave, getting relaxations that characterize each type of gel.

[ES] El presente proyecto tiene como objetivo construir y cocinar estructuras alimentarias complejas mediante impresión 3D. Se basará en la caracterización fisicoquímica y construcción del diagrama de estado mediante distintas técnicas calorimétricas y dieléctricas obteniendo además las cinéticas de gelificación del colágeno en sus diferentes estados de agregación secundaria. Para ello se debe obtener el diagrama de los distintos estados de gelificación de colágeno mediante técnicas como calorimetría diferencial de barrido asociados a cambios conductimétricos, y posteriormente caracterizar las propiedades viscoelásticas de los distintos estados de gelificación mediante ensayos de textura. Además, el sistema de gelificación requiere de un sistema de monitorización que permita asegurar el estado elástico del gel, para ello se ha analizado por espectroscopia dieléctrica en el espectro de la radiofrecuencia y las microondas, obteniéndose las relajaciones que caracterizan cada tipo de gel.
